Starward
`Whisky done differently' Founder David Vitale grew up in a traditional, large Italian family, where informal get-togethers and eating played a major role. The development of Starward was a logical step: an accessible, all-round whisky without fuss.
Starward is made in Melbourne, Australia's bustling foodie capital. There, they believe that the focus should be on the flavors, not on the 'airs and graces'. Melbourne's unique “4 seasons in a day” climate benefits whisky: continuous temperature changes make optimal use of the taste of the Australian red wine casks in which the whisky matures. This is what we call elemental maturation. Starward has a delicious fruity taste because it has matured in red wine casks from the Barossa and Yara Valley.
Starward 100 Proof
In the Fortis edition, Starward uses non-chill filtered single malt with a high alcohol content of 50%. It is composed of Australian barley and artisanal brewer's yeast that provides extra flavor. It is aged in 100% American oak barrels that provide an opulently rich flavor and enhance the toasted oak and vanilla characteristics inherent in the whiskey. It also has juicy red wine characteristics thanks to casks from mostly Barossa Valley wineries (which help with Shiraz and Cabernet wines). They char a few casks to give depth and intensity - most of them, however, are fresh, giving intense red wine aromas.
Like all Starward whiskies, this one has an approachable and velvety softness. The first notes are Madagascar vanilla and toasted oak. These lead to a flavor that is full of cinnamon, quince, chocolate and Muscadelle raisins, leading to a baking spice finish.
Smell: Madagascar vanilla, richly roasted American oak, blackcurrant jam, raisins, caramelized figs and ripe plums.
Taste: Vanilla, Muscat Raisins, Quince, Chocolate Ganache, Cinnamon and Fried Banana Bread.
Finish: Viscose and balanced Ripe figs, raisins and spices.
Signature drink: 'Pacific East'. Take a glass and fill it with 40 ml of Starward Fortis Whisky, 20 ml of nut liqueur and 10 ml of Vermouth. Mix this with some large ice cubes and make sure the entire glass is chilled. Drip some angostura and garnish with a slice of lemon. Delicious in combination with anchovies.

Starward Left Field
For their Left Field, Starward wanted to make a whiskey that was approachable. This is a versatile single malt that retains all the characteristics of Starward's distinctive aging in Australian red wine casks. They bring together the best Australian barley and red wine casks, which come from
from the famous Barossa Valley and Yarra Valley wine regions. Unique to the Left Field whisky, they only use 100% French oak, which provides a rich and spicy mouthfeel. It also enhances the inherent complex oak flavors while still allowing the delicate wine aromas to come through.
The nose has soft aromas of tropical fruit, red apple peels and fresh red berries that are all warmed by vanilla spices. Bright tropical fruit comes through on the palate, with a deliciously rich and fulfilling mouthfeel with lightly toasted oak. It has a soft and delicate finish.
Smell: Soft fragrant red fruit, apple and tropical fruits.
Taste: A character of tropical fruit and toasted oak.
Finish: Refined dry oak
Signature drink: Starward deliberately created this whisky with the feeling that it is easy to use in the mix, but is also delicious on its own. Drink it the way you like it! We love Starward Left Field mixed with a tonic: take a highball glass with 50ml Starward Left Field, add tonic and add a slice of grapefruit as a garnish.
Starward Nova
Starward Nova is fully aged in former red wine barrels that previously contained the sturdy Australian Shiraz, Cabernet and Pinot. The whisky that goes into these casks starts with the use of Australian Malted Barley. This single malt whisky is double distilled and fermented with brewer's yeast, providing a distinct and bold flavour. When filling the casks, Starward whiskies have a lower alcohol content of 55%. This ensures that their whisky extracts more of the red wine, fruit characteristics and tannins from the casks.
The end result of this process is a whiskey with a bright aroma, red berries and orchard fruits combined with a delicate spiciness of oak. In the mouth, the flavors develop, with hints of a rich dessert of red berries, combined with vanilla, spices and a
hint of caramel. The aftertaste is exceptionally well balanced and lingers on the tongue. The sweetness fades gently, but the other flavors stay.
Smell: Fresh red berries, orchard fruit and soft, spicy oak.
Taste: Vanilla and berries with caramel and spices.
Finish: Long and fruity, slightly acidic.
Signature drink: The Nova Old Fashioned; have a tumbler glass. In addition to 60 ml of Starward Nova, add 10 ml of sugar syrup. Add 3 to 5 drops of Angostura Bitter, a large ice cube, and garnish with orange or lemon peel. Sit by the fireplace, put on some music, while
you're sipping your delicious whiskey cocktail.
Starward Solera
Solera is Starward's first whisky. Fully aged in Apera casks, Australian sherry. With its elemental maturation, Starward Solera is a beautiful reflection of Melbourne. This whiskey owes its name to the way it is made: they take all the sherry casks that are filled with
Starward whisky. Half of this is combined in a tank so that they are blended. After that, these are bottled. The sherry casks are then filled again with Starward whisky and continue to mature. This is a new form of Solera maturation. Thanks to this new Solera maturation, you can still find part of the first Starward bottling in each bottle. That's what makes this bottle very special.
Smell: Tropical fruit, caramel and vanilla
Taste: Toasted caramel and creme brulee, figs and sweet spices.
Finish: Juicy and a mouthful of spices
