Stauning
Founded by a diverse group of nine friends, Stauning is based in a small village on Denmark's west coast. Their journey began in 2005, without any knowledge of experience in producing whisky. Just a desire to make a great (Danish) whisky. It wasn't until 2011 that the first bottles came on the market. Neither an Old World Whisky, nor is it a New World Whisky. Stauning calls their whiskies “Our World Whisky”. At the time it was released, there was a massive revival of more local ingredients, artisan producers, and Stauning was immediately noticed. Even with a production of 80,000 litres, they couldn't keep up, so they opened their new purpose-built distillery in 2018. However, they have kept their ethos and their barley is purchased locally.
With Stauning Smoke, their flagship smoked single malt whisky, Stauning has created a terroir whisky that they think will 'blow away' you. While maintaining their New Nordic philosophy, this is a single malt whisky made with pure West Jutland malt barley malted in-house on the floor. It is then smoked on locally harvested peat and heather. This local origin really gives a taste that can only be found in Stauning Smoke. They use a double distillation in small flame-heated pot stills, and once the entire process is complete, they mature in first-fill bourbon casks, first fill Madeira casks, first fill Jamaica Rum casks, and Virgin American Oak casks.
Stauning Høst
This Whisky is a blend of our single malt and rye malt whisky, made entirely from malted grains. The name HØST means “harvest” in Danish. This whisky reflects the natural beauty of the environment and the season that Stauning Distillery provides the most essential Danish grains to make our whisky. Stauning strives to make whisky that showcases the elegance and beauty of nature, and every sip of this whisky is a taste of Denmark's peaceful surroundings. It is a delicate, smooth and balanced whisky perfect for starters as well as experts, made with a marriage of whiskies aged in American oak and a touch of port wood.
Stauning Rye
A liquid interpretation of freshly baked Danish rye bread. A Nordic rye whiskey with dark roasted aromas and a long fruity aftertaste. This is a different type of rye whiskey. The combination of malted rye and barley in a pot of distillation makes a soft,
fruity and full-bodied whiskey.
Smell: Freshly baked rye bread, wine gums and a hint of pepper on the nose.
Taste: Soft dried fruit, ripe cherries and peppery oak, balanced by vanilla and citrus.
Finish: Peppery, long, smooth, fruity and smooth finish.
Signature drink: “Stauning Rye Manhattan”. You know the great Manhattan cocktail, but could a Scandinavian version be even better? Using Danish whiskey it speaks to the Norwegian in us all. Pour 5 cl of Stauning Rye whiskey, 2.5 cl of Vermouth into a cocktail shaker. Add 2 Angostura drops and don't forget the ice cubes. Stir for 15-20 seconds before pouring into a cocktail glass. Garnish with a maraschino cherry and serve!
Stauning Kaos
Everything Stauning does, in a bottle. A lot of smoke, spice and a lot of complexity in a versatile whisky.
Smell: Slightly smoked, spicy and sweet, complex.
Taste: Breakfast cereal, chocolate, oak, caramel, cinnamon and campfire.
Finish: Like a smoked chocolate bar with nougat, caramel licorice wood and sweet apple and oak.
Signature drink: Stauning Kaos Horse's Neck! Mostly made with cognac, but this is made with the “sweet and smokey” Stauning Kaos whiskey. It is served with angostura bitters and a long lemon twist (horse neck), making for a dynamic cocktail. Top with ginger alé and stir gently. Lovely!
Stauning Smoke
Stauning Smoke is made from pure local ingredients, malted on open floors, smoked over peat and heathland that you only find in the landscape around Stauning. Aged in a blend of the following 1st fill wine and spirit casks: Bourbon, Madeira, Jamaican Rum and American Oak. The result is an elegant and refined whisky with a soft smoky flavour and a complex character that is reminiscent of the dunes, the heathland and the wind at the North Sea.
Smell: Soft fragrant red fruit and warm vanilla spices
Taste: Balanced with a character of fresh tropical fruit and lightly toasted oak.
Finish: Refined dry, slightly acidic.
Signature drink: 'Smoky Milkshake'. The sweetness of vanilla ice cream meets the smoky flavor of the whiskey. A perfect match for a warm summer evening or in front of the fireplace on a cold winter night. Add the following ingredients in a blender: 40 ml Stauning Smoke whiskey, 2 large spoonfuls of vanilla ice cream, 6 cl coconut milk, 10 ml agave syrup. Mix and serve in a highball glass. Garnish with toasted coconut flakes.
